Tahiti Lemon
The Tahiti lime is used to make lemonade and for all other applications of the Criollo lemon. In Florida, a wedge of lime is generally served with avocado, and lime juice is often used as an alternative to vinegar in dressings and sauces.
Formerly, it was held that the oil from the peel of the Tahiti lime was of inferior quality. Since the late 1960s, it has been accepted by the trade, and good quantities are produced as a byproduct of the juice extraction process. It is used to enhance lime juice and for most other purposes for which Criollo lime peel oil is employed.
